Overnight oats is quite simply a wonderful idea, so easy, fast, delicious, healthy and versatile. It really ticks all the boxes for a filling, nourishing start to the day. The oats are a great source of soluble fibre, protein and B vitamins to set you up for the day and the berries add vitamins and antioxidants to support your immune system.
To be honest I prefer pinhead oatmeal porridge when the weather is cold but the Overnight Oats is a winner in the warmer weather! Sadly we haven’t seen much of the sun recently but hopefully there is some good weather coming soon!
Anyway back to the awesome oats. Here is the basic recipe to which you can add any selection of fruit, nuts or seeds. I buy my jumbo oats loose from Locavore or Wholefoods, much cheaper and no plastic packaging to deal with so better for the environment as well!
2/3 cup of jumbo oats
1 cup of non dairy milk, I like Oatly oat milk, almond milk or hemp milk
2 tablespoons of chia seeds
A handful of berries, blueberries, raspberries, strawberries all work well. You can use frozen berries too. Alternatively a mashed ripe banana and some cinnamon or a grated apple with some raisins is also delicious.
Simply mix the oats and chia seeds in a glass mason jar, add the milk and berries and stir well to mix. You can add a teaspoon of maple syrup or honey for extra sweetness.
Close the lid, put the jar in the fridge overnight and by the morning the chia seeds will have absorbed all the milk and you will have a delicious breakfast! Just add a selection of toppings, chopped walnuts, sunflower seeds, pumpkin seeds, goji berries, toasted coconut flakes or more berries to your taste.
The great thing about this is if you don’t have time for breakfast in the morning or you’d rather eat your breakfast later then just take the jar with you to work and eat it at your leisure!

Hi there, I hate to admit it but it’s been rather a long time since I posted anything on my blog! I confess I have a problem with technology, it’s not my thing. I got a new laptop and I’m still trying to convince myself to use it so that’s my excuse! I know, it’s pathetic but sadly true.
Anyway all is about to change!
I was fortunate enough to spend a week recently at The Body Toolkit juicing retreat in the beautiful Highlands, run by the rather wonderful Katrina Mather! It was just what I needed to reset myself, immersed in the most luxurious surroundings with spectacular scenery and blessed with beautiful weather. The 6 night retreat was a real tonic for body, mind and soul.
It really was giving ourselves the gift of time, a precious commodity for women these days!
Time to reflect, time to connect, time to laugh, time to enjoy, time to cleanse, time to replenish, time to learn, time to unlearn ,time to heal, time to focus, time to relax, time to let go but most of all the time to just be.
The whole experience reawakened my latent creativity and I wrote a poem about what the retreat meant to me.
I’d like to share it with you, in the hope that perhaps some of you will be able to grant yourself the precious gift of time and experience the retreat for yourselves.

In this healing space
We take our place.
Stress and fears washed away;
New positive habits, here to stay.
The precious gift of time was ours,
Time to stop and smell the flowers.
To nourish body, mind and soul,
That’s why we came, that was our goal.
Stunning sunsets, morning walks,
Mountain streams and sparkling lochs.
Nature’s beauty all around,
Soft green lichens on the ground.
Breathing deeply fresh clean air,
Breathtaking scenery everywhere.
Magical is what comes to mind;
Clarity is what we’ll find.
Juices and smoothies of every hue,
Nourished and cleansed us all day through;
Evening soup was such a delight,
Stopped tummies rumbling through the night.
Oil pulling, grounding, dry skin brushing,
Hot and cold showers: I wasn’t rushing!
Mindfulness, affirmations, EFT,
With benefits we could clearly see.
Vision boards, what’s that you may ask?
Well it really was quite a task.
Focusing, giggling into the night,
We really must have looked a sight.
But our creativity came to the fore,
I’m pinning mine on my bedroom door
To remind me of my good intent
Those vision boards were heaven sent.
‘Funky Friday’, setting the scene,
Ladies you know what I mean!
Wrapped in a blanket and a coat
Strutting my stuff on that freezing boat.

Threats of ‘You-Tube’ filled the air.
But what a hoot, it made us smile;
It pays to go the extra mile.
Soul sisters was what we became,
Life will never be the same.
Love, support, laughter and fun;
Walking barefoot in the sun.
Topping up our Vitamin D,
Clearly where we were meant to be
Sharing such a special place
Showered us with heavenly grace.
For now we are full of resolve,
There is no problem we can’t solve.
The tools are there, we have the key
To be the best that we can be.
So, whatever ails you or holds you back
The Body Toolkit will get you on track
To live the life you truly deserve
With all the abundance of the Universe.
