SIMPLE TOMATO & CHICKPEA SOUP

Today we've been busy decorating our lounge and we needed something quick and nourishing for lunch. Jenna quickly threw this soup together in literally 5 minutes and it was delicious so I thought I'd post the recipe.

This soup ticks a lot of boxes for me, its simple, nutritious and tastes great!

You get fibre, protein and vitamins from the chickpeas, a good dose of antioxidants from the tomatoes, and your good gut bacteria will be very happy with the fibre from the red onions.
This soup also packs a real  punch flavour wise from the sun dried tomatoes, paprika and balsamic vinegar.

I finished mine with seaweed flakes to add more minerals but Chia seeds, sunflower seeds, pumpkin seeds or fresh basil or parsley would also be a great addition.
It's also so much fun creating a nice pattern with some soya or oat cream!

It never ceases to amaze me how delicious and healthy a soup can be made from a few store cupboard ingredients! 
I hope you give this one a go!

Ingredients
1 tin tomatoes
1 tin chickpeas
1 red onion, chopped
1heaped teaspoon paprika
2 garlic cloves, chopped or crushed
1 litre vegetable stock
4 sun dried tomatoes, chopped or 1 tablespoon red pesto
Splash of balsamic vinegar ( optional)
Method
  1. Quite simply put all the ingredients into a large pot, except the balsamic vinegar which gets drizzled in at the end.
  2. Bring to the boil, then turn down the heat, put the lid on, and gently simmer for 15 to 20 minutes
  3. Add the balsamic vinegar
  4. Blend
  5. Add more stock if the soup is too thick.
  6. Drizzle with soya cream or oat cream or dairy cream if you eat dairy and garnish with seaweed flakes or chia seeds or basil.

I certainly will be giving this one a go, working my way through the recipes slowly but surely, they are so quick and easy, not forgetting tasty.

This looks seriously yummy. I have noted the ingredients and am off to buy them and make a batch tmo. Do you reckon you can freeze it too? LOVING the weekly recipes to my inbox btw...going to try a few of them!

Good for you Lisa, you can freeze any of the soups! Let me know if you try any of the other recipes. Sometimes the best food is the simplest and all of my recipes are easy & packed with flavour and nutrition! Hope you find some new favourites!

Just finished making the soup, so easy, going to have it after yoga, along with my courgette and carrot sealed bread. You will need to compile a recipe book soon Janice. That's great that you can freeze. Can you freeze the coconut scone recipe.

I'm most impressed Roz, you are fairly getting through the recipes! Yes you can freeze the coconut scones after you've baked them.
I have been thinking about a recipe book for a while... coming soon!

YUMMMM, just made this today finally. Really, really yummy. Have had chickpeas in my cupboard for ages and not known what to do with them. This is ace Janice, I'm going to be using your site to cook every week!

That's great Lisa, its really not that difficult to make healthy, delicious food so long as you have a few basic recipes and that's where I come in! Look forward to hearing about which other recipes you try! Its definitely soup season so there will be lots more recipes coming soon!

Have no food in the house and then suddenly remembered this - so I made it but had to use cannellini beans and beef stock. Still tastes delicious and is way better for me than the pizza delivery I was otherwise facing!!

Great its amazing how good soup can taste with a few decent ingredients! Way cheaper and healthier than a takeaway!

Great to hear Lisa, try garnishing it with chia seeds, mara seaweed flakes or hemp seeds for extra protein, minerals and flavour!
